Well! Job done.
I ended up removing/cutting through the rear seat belts anyway, and Mr Mouse had also been at those. So that made removing the seat back a lot easier. I think the year of the car (1985) means I can get away with no rear belts. I've 3D printed up some little pucks to cover the holes for now. Though belts will be getting replaced in due course once it's on the road (I never have more than 1 passenger anyway).
1 lower rear bracket mount was pretty solid, but the other, the one that was buried in the hedge, was pretty ropey in the end. I'll replace both in due course when replacing the rear belts.
The actual replacement of the seatbelt wasn't too bad once I'd got to it. Replacing the panel was bloody awkward, up against the side of the seatbelt reel was incredibly tight, but in terms of removal/installation it was OK.

One odd thing is the seatbelt warning light. The old driver's buckle is now replaced with an aftermarket one which it turns out has no switch in it. The light stays on, which I'm not surprised about, but I've tried connecting/disconnecting the old wires and it stays on! I'm guessing I have a similar earthing problem to the one I had with the washer. I've never sat in it with the seatbelt on, so I'm guessing it's been like that for a long time.
